So hyped. So Worth it. Au Cheval.
I dragged Adrienne out to Randolph Street in Chicago and we made our way over to Au Cheval. The first attempt to visit this joint resulted in a 2-3 hour wait, we opted out. Today, we tried our luck again and got in within 15 mins, sweet. We sat at the small bar in front of this little gastropub/diner (best seat in the house) and ordered what USA Today, Thrillist, Huffington Post, The Food Network and many others call, the BEST BURGER in the USA, The Perfect Burger, etc. I heard about this one through some friends and read about it online. I was rolling through Chi-town for work so you know I had to make the stop. I am a little cautious with things that are hyped to this level but I have to say that after getting my hands on this burger, I get it. I had a spiritual experience with this heavenly sandwich.
It exceeded my expectations and it was really great to see the attention to detail while these guys in the kitchen were prepping it. Each ingredient had its own step and the process was done very carefully. Once it was completed, they presented it to me and I didn't even know what to say. It was beautiful. I ordered the Double Au Cheval, with bacon & a fried egg. I quickly learned that a double comes with (3) beef patties & cheese. The bacon was done in a pork belly style. Glazed, thick and flavorful beyond belief. Inside were some pickles, small chopped onions and a super savory dijonaise. The egg came topped with chives, resting on top of a perfectly buttered brioche bun. Beside the burger, they pair it up with a huge delicious pickle. I placed/piled each side of the burger together and went in. It was phenomenal. I had to close my eyes for a bit to focus on each individual flavor. Geez, I was impressed.
I highly recommend getting over to Au Cheval to experience this for yourself, your tastebuds will never be the same. Cheers!
