Stroopwafels: Amsterdam, Netherlands

Warm, soft, sweet & delicious.

We found ourselves at the Albert Cuyp Market in Amsterdam and right in the middle, we caught a beautiful whiff of freshly made stroopwafels. The guy making them explained that they were the only place left that hasn’t gone commercial and that they still use an old secret family recipe. He pressed the wafels, slapped the filling in the middle and sandwiched the two pieces together. The filling was like a warm, smooth caramel with cinnamon and spice. I held it straight so it wouldn’t flop over and I took my first few bites and really savored it. After that, I inhaled it. It was delicious. Stroopwafels are typically placed on top of your cup when you get a hot drink. It warms the wafel and gets it ready to be enjoyed with your drink. I must find a recipe and try to recreate this.
